Tuscan Roasted Potatoes
1 1/2 pound red potatoes
(thinly sliced or 1/4" diced)
1 jar Pometta's Tuscan Olive Spread
1 large onion (thinly sliced or chopped)
1/8 cup olive oil (optional)
Preheat oven to 350° F. Mix all
ingredients in shallow baking casserole and cover. Bake for 90
minutes, stirring occasionally, or until potatoes are tender and
golden brown. Remove cover for the last five minutes. Delicious!

3 to 4 TBLS Pometta's Olive Spread
1 oz. thinly sliced ham & Italian salami
1/2 oz. thinly sliced provolone cheese and Monterey Jack cheese
Slice the roll into halves. Spread Pometta's
Olive Spread on both halves of the bread. Layer the ham, salami and
cheese on bottom half of the roll; replace top of roll. Microwave on high
for 45 to 60 seconds.
